Pumpkin Bread Recipe

I don't know about you, but 2020 hasn't been my favorite. I will say the excitement for the fall season is putting me in a better mood. It's still August, but I am so ready for fall to be here. One of my favorite things about fall is the smells, and this pumpkin bread will make your entire house smell like fall.

I made this recipe last weekend, and while it was cooling, I had to run an errand real quick. I came back into the house and the smell of pumpkin cinnamon goodness made me feel like something was just right in the world. I think I may commit to making this recipe every weekend until Thanksgiving (too much?). Either way, if you're in a funk, and you're looking forward to fall, I highly recommend making this recipe. It's delicious, it makes 3 loaves, and it is always paired well with coffee. Let me know if you give it a try!
Pumpkin Bread Recipe
Ingredients
Dry ingredients
2 1/2 cups sugar
3 1/2 cups flour
3 tsp baking soda
1 tsp cinnamon
1 1/2 tsp salt
1 tsp nutmeg
Wet ingredients
4 eggs
2 cups pumpkin
1 cup vegetable oil
1/4 cup buttermilk
Additional ingredients
sprinkle of orange peel
3/4 cup chopped walnuts
Directions
Preheat oven to 350 degrees
Sift dry ingredients (flour, sugar, baking soda, cinnamon, salt and nutmeg) together in large bowl
Combine the wet ingredients (eggs, pumpkin, vegetable oil, buttermilk) together in a stand mixer or bowl
Add the dry ingredients to the wet ingredient mixture
Stir by hand or use an electronic mixer to combine
Fold in chopped walnuts and orange peel
Grease 3 medium size loaf pans
Distribute the bread mixture into the 3 loaf pans
Bake for 50 - 60 minutes
Let cool for 20 minutes before cutting
